Birthday Scones

If you haven't noticed, I like to bake...a lot. My favorite thing to do is take classic recipes that I learned at LCB and add my own spin to them. The tweaks aren't earth shattering, but they usually make for a fun and colorful twist of the original.

This time I tweaked my classic scone recipe and decided to add some color. The result was a fun scone that tasted like cake, and looked like it was ready to make an appearance at a party.  This is definitely not your grandmother's traditional scone, this is a scone meant to be the life of the party. 🙂

Scone Ingredients
 3 cups All-purpose flour
 ¼ cup + 1 teaspoon of sugar
 2 ½ tsp baking powder
 1 tsp kosher salt
 1 cup cold, unsalted butter, cubed
 1 cup + 1 tablespoon of milk, divided
 1 tbsp vanilla extract
 1 tsp almond extract
 ½ cup rainbow sprinkles
 Vanilla Glaze (recipe to follow)
Vanilla Glaze Ingredients
 ½ cup powdered sugar
 1 tbsp whole milk
 ½ tsp vanilla extract
Method- Scones

Preheat oven to 375°F (or 350°F for convection baking). Line a baking sheet with parchment paper. Lightly spray your parchment paper with cooking spray.

In a large bowl, whisk together flour, ¼ cup sugar, baking powder, and salt. Using 2 forks, cut in the butter until there are no large pieces of butter and the mixture is crumbly. Add 1 cup milk, vanilla and almond extracts. Using a large wooden spoon, stir until the dough comes together and a shaggy dough forms. Add sprinkles, and stir to distribute.

Turn out dough onto a floured surface, and pat the dough into a 9-inch circle, about 1 inch thick. Cut into wedges. Transfer the wedges to a prepared pan. Brush with remaining 1 tablespoon milk, and sprinkle with remaining 1 teaspoon of sugar.

Bake until golden, about 25-30 minutes. Let cool on wire rack. Once cool, drizzle with Vanilla Glaze, and garnish with extra sprinkles, if you're feeling extra festive. 😉
