Monday through Friday we scurry out of the house to get to school and work on time. Going back to work full-time has definitely put a time constraint on my creativity in the kitchen. Which means that on weekends I get to fulfill the cravings that I was not able to satisfy during the work week. I especially like to go big with breakfast. Probably because it's the meal that I get cheated out of all week long. By the time everything is done in the morning, I literally run out of the house in with a half toasted bagel, a pint of cold brew coffee, in heels with my work bag as I yell at the kids that we got to go, while they are still trying to locate their other shoe, because they "can't find it"... Mind you I count down for them every morning, "10 minutes kids".... "5 minutes"... and now we're late. >:-/
This happens EVERY morning. So on weekends, I enjoy the slow pace and the fact that I can spend time making the meal I miss every morning. Today I bring you Birthday Waffles, because it's officially my birthday month, and I'm trying to give Mr. Hangry a hint. lol!!

Preheat waffle Iron.
Mix all your dry ingredients in a large bowl- Flour, sugar, baking powder, and salt.
Whisky to combine.
Add the wet ingredients to the same bowl- eggs, milk, vegetable oil, vanilla and almond extract. Whisk until smooth.
Once you have removed the majority of lumps from your batter, add the sprinkles and give it one good last stir to distribute sprinkles.
The next instructions will vary depending on your waffle iron. Follow manufacturer instructions for the amount of batter your waffle iron holds.
My particular waffle iron holds about 1/3 cup of batter.
Pour 1/3 cup of batter into waffle iron and cook for 4-5 minutes, or until golden brown.
Remove from waffle iron and set on wire wrack to keep your waffles crispy.
Repeat the process with remaining batter.
Serve your waffles with vanilla whipped cream, and fresh berries. 🙂
